From 13-15 September 2023, the EXCEL4MED project was showcased at the 9th International Conference on Chemical Reactions in Foods (CRF 2023) in Prague (Czech Republic).
Representing the National and Kapodistrian University of Athens, Prof. Marilena Dasenaki presented our latest work on sustainable food innovation during this prestigious scientific gathering.
Highlighting EXCEL4MED’s green innovations
Professor Dasenaki disseminated the poster titled: “Application of Green Extraction Technologies in Fruits: Innovations within the EXCEL4MED Project”, co-authored by our partners Vasilis Valdramidis, George Psakis, Ioannis Dimitros, Marianna Giannoglou, Marilena Dasenaki and George Katsaros.
The presentation explored the use of green extraction methods in fruit processing—one of EXCEL4MED’s key research pillars.
This approach supports the project’s mission to promote sustainable food production, valorise fruit side-streams, and develop nutritious, value-added products within the Mediterranean food supply chain.
About the CRF 2023 Conference
Organised under the auspices of the Food Chemistry Division of EuCheMS, CRF 2023 continued a long-standing tradition of exploring cutting-edge topics in food chemistry. The 2023 edition was held under the theme: “Chemistry & Nutrition Science Beyond Smart Food Designing.”
Key focus areas included:
- Raw materials for food production: including bioactivity screening and quality selection.
- Processing and storage: emphasising Maillard reaction pathways and nutrient stability.
- Strategies to improve quality and shelf life: with attention to mild processing methods.
- Mitigation of food contaminants: exploring interactions of additives and residues.
- Novel foods and up-cycled ingredients: including valorisation of food waste and side streams.
Through our participation, EXCEL4MED brought forward practical examples of how green technologies can contribute to future-ready food systems, aligning with the conference’s emphasis on sustainability, safety and innovation.
